Carrot Cake with Cashew Cream

A few weeks ago I was at a birthday party of one of my favorite humans and one of the birthday cakes was this vegan carrot cake. It was so moist and delicious and I knew instantly: I had to try to bake it at home. As with all of my recipes, this one is oil free, sugar free, vegan and full of healthy ingredients. So enjoying it gets even more fun!

What is so great about this recipe is how easy it is. After I made it for the very first time, I was so surprised how well it turned out to be. I am all about simple and quick preparation that saves me some time for my favorite activities: yoga, reading or spending time with loved ones. (That also includes my animal friends, of course!)

Since this is a carrot cake, we have quite a lot of carrots inside of it. But that’s a good thing as firstly, they are so rich in nutrients such as Vitamin C, Beta Carotene and Vitamin K1. Which are all amazing components for our brain, our eyes and our heart. Secondly, the carrot cake gets so extremely moist it is almost addictive. And thirdly: you can get carrots all year round which makes this cake a perfect dessert for all seasons.

The Cashew Cream is also super easy to make: All you need is cashews, lemon peel, vanilla extract and something to sweeten it up. So something like dates, maple sirup or stevia. I was so surprised how well it turned out!

Ingredients

This amount is for one big tin, if you want to bake it in a cake form, use half the amount

For the dough you’ll need:

500 gr oats (or any kind of flour you like)

6-8 dates (depending on how sweet you want it to be)

1 tsp of cinnamon

1 tsp of ground ginger

100 gr ground almonds

5 tsp ground flaxseeds

600 gr carrots

6 tbsp apple sauce

1 lemon

100 gr of cashews

50 ml almond milk

For the cashew cream:

200 gr of cashews

peel of a lemon

lemon juice (1 lemon)

1 tsp vanilla extract

sweetener of your choice (dates, maple sirup , etc)

70 ml almond milk

Preparation

  1. Soak the cashews for the cream over night
  2. Mix the oats (or flour), cinnamon, dates, almonds, ginger, flaxseeds, chopped cashews together
  3. Chop the carrots and blend them up. (I used a high speed blender)
  4. Blend the carrots, apple sauce, flour mix, lemon juice and lemon peel together and add the almond milk
  5. Bake the dough for about 20- 25 minutes at 180°C
  6. Meanwhile blend the soaked cashews, vanilla extract, lemon peel, lemon juice and sweetener. Add the almond milk
  7. Refrigerate the cashew cream for about 30 minutes to thicken up
  8. Let the dough cool down after it is finished baking
  9. Cover the dough with the cashew cream and sprinkle some more cashews or lemon peel if you like

Baby plants- grow your own home plant paradise

Plants, Plants, Plants. This must be my most favourite topic of all times. And I am not even referring to any plant-based recipes but more so to the plants I love to have around me at home. The wonderful part about having “decoration” that is alive is that you can see it grow and evolve. And I tell you: the feeling of getting excited about a new leaf is real!

Home gardening brings so much joy and every day comes with a new surprise. Think about plants as your new pet. They need just as much love and care as a cat or guinea pig. You will want to treat them with as much attention and love as your furry friend. And your effort will for sure pay off. The energy and atmosphere of a home filled with plants compares to no other. You can truly feel they are alive and that makes your home an even warmer place.

Being a plant mom…

When I started bringing home some plants, I first was afraid that I might not be able to take care of them as they need it. But over time I became more confident with my skills. And also: the key factor here is practice! It is no rocket science or a hit or miss. See it as a new skill you want to learn. This not only takes the pressure off of you but also makes it all so much more enjoyable.

It also is always a good idea to start small. Try to start with plants that do not require too much of special treatment or are very sensitive. The more difficult a plant is to take care of, the more frustrated and even worried you will get.

Book tips for Spirituality & Personal Development

As you probably already know, I am an absolute fan of spirituality and personal development. The topic is very close to my heart and it has made so much possible for me. Since I also love to learn something new by reading, it is a logical consequence that I have accumulated quite a pile of books about this subject. And that is why I want to share my my book tips for spirituality & personal development with you.

I have always liked to immerse myself in the parallel worlds of books and love this magical sphere so much.

Even though my taste has changed a bit over time, my passion for books hasn’t really diminished. On the contrary. Because I so often realize how valuable it is, not to be on my mobile phone. Especially in the digital society, the “always on society”. Every time I notice how good it is for me to read on real paper and not staring at a display. Fun fact: I got a kindle from my parents years ago and to be honest: I might have only read one book on it, at the most. I just need the feeling of a real book in my hand.

My favorites for Spirituality and personal development

The law of attraction – Esther and Jerry Hicks

When I heard about this book, more precisely about the Hicks and their approach, I was honestly a little skeptical at first. I heard about them pretty much at the beginning of my “journey” and found it a little too weird at first. But after reading the book I have to say: you get used to it and now I am totally fascinated by it! Just to explain it to newbies: Esther channels a higher being called Abraham. This means her husband Jerry asks questions on all sorts of topics and Abraham answers through Esther. That sounds pretty much like “woowoo,” but once you read the book, everything falls into place and the answers are just SO GOOD! And yes, you saw right, I read it in Spanish. But of course it’s not a must to do the same!

The fifth agreement – Don Miguel Ruiz

With “The Four agreements” Don Miguel Ruiz has pretty much written the standard work for personal development. With the fifth promise these principles were further extended. The former four are repeated and amended by a fifth promise. I consider the four principles to be absolutely groundbreaking and they have helped me a lot to find my own path. With the fifth, a further, essential wisdom is addressed, which I have thus integrated much more into my life: To listen and yet to question what this could mean.

A new earth – Eckart Tolle

An absolute Gamechanger! My dear Laura recommended this book to me and it opened my eyes. Especially at the beginning of my personal growth it is such a wonderful source to understand the basic principles. What I liked so much about it is the positive feeling it gives you whilst reading. In my opinion, Tolle’s attitude is just great and he explains everything in a way that is easy to understand, which is ideal to start with.

The Signs – Carolyne Faulkner

As I mentioned in my 22 facts about me, I am an absolute fan of astrology. So of course this book is a must-read. What I like so much about this one is that it is about dynamic astrology. Spiritual and astrological teachings are combined with psychological insights. So your evaluation is not a static evaluation or description, but much more a possibility to get help with decisions. But above all to live in harmony with one’s own being and personality.

Astrology love next level- wear your sign!

One of the very first things that I tend to say about myself or ask about when meeting someone refers to astrology. Somehow, I tend to get involved in the topic in one way or another almost every time. I guess it’s no wonder that astrology and anything related to it is a hot topic here as well… And I have something very exciting which associates with it that I wanted to share with you here. As you probably know by now, I am a Capricorn Sun, Cancer Moon, and Scorpio Rising. Proud to be a Capricorn!

Yes, I may be a perfectionistic Capricorn Sun & Cancer Moon that keeps on constantly looking for improvements and I sometimes have issues with setting boundaries. But protecting the emotional side inside of me can be a challenge at times, too. This is 111% me and every day I learn more about how to best work with my imperfections. Moreover, I see them rather as a possibility than a weakness. I am proud to be exactly the way I am. And learning more about my natal chart, working with the moon cycles, signs, and anything connected to planetary constellations is what truly made all the difference in my journey of self-development and my spiritual evolution.

How I leveled up my astrology love
